How does one actually channel? Could a person going through extreme suffering in mental institution channel different spirits?

That's debatable. Some say Animistic Bon was dominant before Buddhism spread from India. It could be suggested that the Bon of today is not the same as the Animistic Bon.

In terms of dealing with spirits, I would look to the 'Bon' of Tibet.

This has apparently been going on over the ages. You cannot get the secret knowledge unless you become one of us, by joining the priest class. This happened all the way back in ancient Egypt and probably before. I can think of some reasons. Power and control, keeping the precious knowledge intact, the knowledge being too dangerous to those who are not ready for it.

Can a 5 year old have tinnitus? Because I've been hearing this high frequency at least since I was 5 years old. I remember in the night, if I could concentrate really hard and listen, the high frequency sound would appear.

Maybe that's a good idea. Try for a month and if it is working then continue.

In my experience, when the energy get's more refined it gets smoother until it is as formless as space.
