Kar3n Posted June 28, 2018 Rainbow Bean Salad 1 can Chickpeas 1 can Black beans 1 can Cannellini beans I can Kidney beans 1 ea Red, yellow and orange pepper Cherry or grape tomatoes Kale or leafy green on your choice Red onion English cucumber Lemon juice Lemon Zest Extra virgin olive oil Salt Pepper Rinse beans and chickpeas, set aside to drain thoroughly. Chop vegetables to your liking, add beans, lemon zest, juice, olive oil, salt and pepper to taste. Toss and refrigerate a couple of hours before serving. I do not measure much so feel free to add as much or as little of each ingredient as you like. Adding in herbs or hot peppers for a kick are great additions as well. In the photo below, I roasted the chickpeas with olive oil and a chipolte and garlic seasoning allowing them to cool completely before adding. 5 1 Share this post Link to post Share on other sites

It's really a matter of whether the individual can digest it well or not. If you have poor digestion, and eat things that can worsen a poor digestive system, then it's unhealthy. If you have good digestion, then you can eat those things and be even healthier than if you hadn't (because veggies are filled with nutrients). For instance, not to ruin a thread about summer salads...but if you have loose stools, then that's usually a sign that you're not ready for salads. But there are many other signs and symptoms beyond this one. To be really clear on whether your digestive system is ready for it, a Chinese Medicine practitioner can discern that through their diagnosis. thelerner Posted September 24, 2018 As its getting colder in the West, sometimes salad is disguised as soup (from https://www.spendwithpennies.com/weight-loss-vegetable-soup-recipe/) Ingredients 1 small onion diced 2 cloves garlic minced 1 cup diced carrots 4 cups chopped cabbage approx. 1/4 head of cabbage 1 cup green beans 1″ pieces 2 whole bell peppers chopped 1 can 28 oz low sodium diced tomatoes 6 cups low sodium broth (veg, beef or chicken) 2 tablespoons tomato paste 2 bay leaves 1/2 teaspoon each thyme & basil pepper to taste 2 cups broccoli florets 2 cups sliced zucchini Instructions In a large pot cook onion & garlic over medium heat until slightly softened. Add carrots, cabbage & green beans and cook an additional 5 minutes. Stir in bell peppers, undrained tomatoes, broth, tomato paste, bay leaves and seasonings. Simmer 6-7 minutes. Add in zucchini & broccoli. Simmer an additional 5 minutes or until softened. Remove bay leaves before serving. This recipe got many good reviews. I'll probably make a batch soon, probably throw in some kidney beans for more protein and fiber.. maybe some hot sauce to kick it up a notch too.
