Soup is good food.  Chicken soup.

Put oil in a pot.  Add chopped onions (carrots & celery a bonus), let it saute, then push to the side of pot and add chicken breast or thigh (shred, in the pot when its done).  Let that brown, flip.  Add water and bouillon.  Let it simmer 20, 25 minutes.  Add in some seasonings.  These days I'm adding turmeric to everything for a health boost.

 

While it simmers look to your freezer.  Do you have peas, corn, spinach.  If you do throw some in.  Likewise make it Mexican with some salsa, hot sauce(easy does it), some tortilla chips.  Or Thai with some chili oil and curry in jars or powder..
